Beef enchiladas, followed by triple choc cookies

H has been hankering for enchiladas for a while, so tonight I made them for the first time. I found a recipe I liked on RecipeBinder and added a chopped green chili pepper. I served this with a watercress, rocket and spinach salad dressed with lemon and olive oil, and it was delicious.

We’d been thinking about making cake in the breadmaker,but I need to make sunflower seed loaf for the week’s sandwiches, so I found a simple BBC Good Food triple chocolate cookie recipe instead. These are wickedly moreish and very quick to put together. We shall both have to take some into work to save ourselves from the temptation to munch through the lot.
